The land overlooking lake Atitlán is exceptional for growing coffee and is at the ideal altitude ranging from 5,000 to 7,000 feet. The soil is rich volcanic ash, which is carefully composted and makes an ideal home for coffee.
Harvesting is a very careful process. Each bean must be taken, one at a time, with a little twist so the tiny stem will stay on the tree and prepare the point for next years growth. Only the fully ripened bean can be taken, the others need more time. Each bag is filled slowly, demanding a full day to pick one hundred pounds. The fading afternoon sun watches those harvesting fill their sacks and carry the heavy bags off the mountain to the Mission where it is sold. The coffee beans are then washed and processed to remove their red-brown husk and clinging syrup. Only then can it be placed on patios and dried in the sun. Six to nine days later it can be packaged and roasted for shipping to the United States, to become that good cup of coffee just for you!
